I think ZzaphodD's PCs are more likely to be fighting such characters rather than being them.

Orbital bombardment. It's the only way to be sure. 
Seriously, the only way I know to take down a Jedi is Darth Vader. That's the only thing that's come close to taking me down, and maybe a one on the wild die if the Jedi is low level. Well, and then there was this girl...
Stop thinking in terms of weapons and start thinking in terms of human weakness'. The Jedi can defeat ANY weapon or technique. But their greatest enemy is themselves.

Absolutely Volar! So many RPG games end up in terms of combat challenge only. We as game masters need to remember the "human element." As role players we are attempting to play as another person.
